You need this in your life. Rich and dark chocolatey in flavour, along with the fresh minty layer really helps to lift up this dessert to another level. Our pure raw cacao butter also adds another layer of luxury and taste, helping our raw cacao powder come to life and really flourish in this pudding.

Ingredients
For the Minty Layer:
- 50g Elements for Life raw cacao butter, melted and cooled slightly
- 300ml coconut cream
- 2 tbsp Sweet Freedom (or your favourite liquid sweetener)
- 4 drops organic peppermint essential oil or 1/2 tsp peppermint extract)
For the raw cacao layer:
- 180g raw chocolate (such as made with our no-fail raw chocolate recipe)
- 2 heaped tbsp Elements for Life raw cacao powder
- 50g Elements for Life raw cacao butter
- 1 tbsp Sweet Freedom (or your favourite liquid sweetener)
- Pinch of ground Himalayan Pink Salt or sea salt
Extra Decoration:
A few fresh mint leaves

Instructions
- Place your small ramekins on a sheet and set aside for easy transportation to the fridge later on. Get started with your minty base layer by whisking all the ingredients together and pouring them evenly at the bottom of each ramekin. Refrigerate for at least 25 minutes
- When you bring out your minty layer, you may notice some separation (this is the coconut cream separating its fat to the top), this is great! Two shades of green which makes the dessert even prettier. Now to get on with the cacao layer, heat your dark chocolate and cacao butter together in a small saucepan and allow to cool to room temperature.
- Now whisk in your raw cacao powder, salt and chosen sweetener to this mixture until it thickens slightly. Pour over your minty layer and pop in the fridge again for another 20 minutes at least. Garnish with fresh mint leaves and get stuck in! Enjoy x
