This recipe came about when we had a friend round for an impromptu meal one Sunday and a spur-of-the-moment dessert was needed. Its so quick and easy to make, and tastes amazing, at least that's what our mate Derek said!
Ingredients
- 4 tablespoons Elements for Life raw cacao powder
- 1 tin of chilled coconut milk
- 3 tablespoons Sweet Freedom or raw honey
- A handful of Elements for Life raw cacao nibs, some chunks of Elements for Life Virgin Ceremonial Cacao, Bee pollen (leave out for a vegan version) to sprinkle on top (optional but highly recommended)
Method
- Carefully open the tin of coconut milk without shaking it first, pour off the liquid which can be saved for later in a smoothie, spoon the thick coconut cream in to a bowl
- Add the raw cacao powder and Sweet Freedom
- Mix together really well, making sure there are no lumps
- Spoon in to serving bowls, top with ground cacao nibs, chocolate flakes or garnish of your choice
You can make the mousse richer by adding more cacao powder, and adjust the sweetness by adding more to your preference.
