Ingredients
For the Lucuma Raspberry bars
- 3 tbsp Castle Combe raw honey (or your preference of liquid sweetener)
- 1/2 tsp vanilla extract or vanilla powder
- 1 level tablespoon of Elements for Life lucuma powder
- 120ml of coconut cream
- 1.5 tbsp of raspberry powder
For the raspberry cream drizzle
- 2 tbsp of raspberry powder
- 2 tsp of Castle Coombe honey
- 3 tbsp of coconut cream
For the chocolate drizzle
- 2 tablespoons of Elements for Life raw cacao powder
- 1 tablespoons of Elements for Life raw cacao butter
- 2 tablespoons of coconut cream
- 1 teaspoon of Castle Coombe honey
- 1sp of vanilla extract
Extra decoration
Coconut chips dusted in extra raspberry powder.

Method
- Begin by making your lucuma raspberry bars. Add all the bar ingredients to a food processor and blend until smooth. Transfer to your moulds and pop in the freezer for 30 minutes to firm up into bars
- Slowly melt the cacao butter over a ban marie on a low heat. You can turn off the heat if it’s getting too warm, and give it a quick blast if it’s starting to set again. This is as you would with our basic raw chocolate recipe
- Add the raw cacao powder to the bowl and stir in well
- Add the honey and vanilla, and then mix in really well until you have a smooth chocolate mixture, set aside for drizzling later
- Bring out the lucuma raspberry bars and pop them out of their moulds. Using a teaspoon, pour a little chocolate over the bars, alternating with the raspberry cream drizzle
- Decorate with extra coconut chips and enjoy!
