Peanut Butter Caramel Slice

People love square slices of cake! And what's not to love about them when you can vary the ingredient to suit your taste or mood. This time round we've a heavenly guest recipe by Waliyyah, who posts as @Healthy.Yummy.Vegan on Instagram with her take on Peanut Butter Caramel Slices.

(Raw, vegan, refined sugar free, gluten free, soy free)

Makes 8 squares

Ingredients

Base

  • 2/3 cup (108g) gluten free oats (or sub normal oats if preferred)
  • 2/3 cup sesame flour (108g) (or sub coconut/almond flour)
  • 4 tbsp almond milk
  • 40g Sweet Freedom (or sub any liquid sweetener)

Peanut butter layer

  • 4 heaped tbsp peanut butter
  • 4 tbsp unflavoured vegan protein powder (hemp works well)

Caramel layer

  • 2 heaped tbsp vegan caramel - can be made by boiling sweetened condensed plant-based milk (eg sweetened condensed coconut milk) until golden

Chocolate layer

  • 2 chunks of Elements for Life raw cacao butter
  • 5-6 tbsp Elements for Life raw cacao powder
  • Just under 2 tbsp Sweet Freedom syrup (or sub other liquid sweetener)

Method

  1. Line tin with baking paper.
  2. Pulse all base ingredients until smooth dough forms. Press into tin and place in freezer.
  3. Pulse peanut butter layer ingredients. Should form doughy, pasty consistency. Press over base layer and keep in freezer.
  4. Melt caramel over a ban marie until softened and pour over peanut butter layer.
  5. Freeze.
  6. Prepare raw chocolate mixture by melting cacao butter over double boiler then stirring in cacao powder and sweet freedom syrup or other sweetener.
  7. Spread over caramel layer.
  8. Freeze until set then cut into squares and enjoy.
