A trio of moreish nibbles that are quick and easy to make. you could play around the fillings to make them just how you like with different nut butters.
Ingredients
Chocolate
- 3.5 tbsp Sweet Freedom
- 3 large pieces Elements for Life raw cacao butter
- 1 cup Elements for Life raw cacao powder
Coconut filling
- 2tbsp Sweet Freedom (coconut nectar or maple syrup would work well too)
- 2 cups desiccated coconut
- 3 tbsp coconut milk
Nutty filling
- 1/3 cup peanut butter
- 2/3 cup tigernut flour
- 1-2 tbsp Sweet Freedom/coconut nectar/maple syrup (depending on taste)
- Tigernuts
Banana & Peanut Butter Filling
- Banana sliced
- 1/6 cup peanut butter
- 1/3 cup peanut flour
- 2.5 tsp coconut nectar (or to taste)

Instructions
- Melt cacao butter over double boiler. Once completely melted, stir in cacao powder and sweet freedom syrup
- Blitz coconut filling ingredients in food processor or blender until soft, pasty and sticky
- Squeeze into rounds then place in parchment lined tin and freeze
- Prepare nutty filling by kneading all ingredients except the tigernuts by hand until smooth dough forms
- Roll into balls and press tigernut into centre
- Prepare final peanut butter filling the same way, then press a small thumb-sized amount into a banana slice. Freeze
- Dip nutty filling balls into the chocolate mix, coat well, allow excess to drip using a fork, then place on rack with foil underneath. When all complete, freeze
- Take other two fillings out of freezer and coat in chocolate
- Once the excess chocolate has dripped off, freeze. Store in fridge or freezer
Note: while the chocolate hasn't hardened, you may add toppings like desiccated coconut, cacao nibs, goji berries etc
