If you love your fudge creamy, gooey and chewy, then you'll love this healthy raw version that's perfect for vegan and paleo lifestyles. Made with dates, hulled hemp seeds, Sweet Freedom and raw cacao powder, its packed with nutrients and tastes amazing!
Ingredients
- 350g soft pitted dates (deglet noor or medjool are perfect)
- 200g hulled hemp seeds (without the shells)
- 100g Elements for Life raw cacao powder
- 3 tbsp Sweet Freedom (or syrup sweetener of choice)
Instructions
- Place all the ingredients in a food processor and blitz until sticky and shiny, typically at least 5 minutes. You can't really over-process this, but if you don't do it long enough then your fudge won't be creamy enough
- Add your sticky mixture into a flexible tray or a parchment lined rigid tray, smooth out to about 1cm think
- Place in the fridge for at least an hour
- Remove from the fridge, cut into portions and enjoy
Best kept either in an airtight container in the fridge or freezer where it will keep for up to a month.

Variations
Add a few chopped nuts towards the end of the processing so they are mixed through without being crushed, to give a nutty crunch to your fudge.
You could also add a top layer of raw chocolate before allowing it to set in the fridge.
