Ingredients

For the Lucuma Raspberry bars

For the raspberry cream drizzle

  • 2 tbsp of raspberry powder
  • 2 tsp of Castle Coombe honey
  • 3 tbsp of coconut cream

For the chocolate drizzle

Extra decoration

Coconut chips dusted in extra raspberry powder.

Method

  1. Begin by making your lucuma raspberry bars. Add all the bar ingredients to a food processor and blend until smooth. Transfer to your moulds and pop in the freezer for 30 minutes to firm up into bars
  2. Slowly melt the cacao butter over a ban marie on a low heat. You can turn off the heat if it’s getting too warm, and give it a quick blast if it’s starting to set again. This is as you would with our basic raw chocolate recipe
  3. Add the raw cacao powder to the bowl and stir in well
  4. Add the honey and vanilla, and then mix in really well until you have a smooth chocolate mixture, set aside for drizzling later
  5. Bring out the lucuma raspberry bars and pop them out of their moulds. Using a teaspoon, pour a little chocolate over the bars, alternating with the raspberry cream drizzle
  6. Decorate with extra coconut chips and enjoy!
