Whenever I get asked by Dan to share a recipe, I have to stop and think about what I have done. I am what you would call an experimental cook and not all experiments work… Luckily this one does. I wanted chocolate and despite having a freezer full of chocolate banana bread, my taste buds were crying out for something else. That something else was sweeties of some description and so these truffles were born.

Ingredients

  • 150g of soaked almonds (you can use any nuts and combine your favourite). Always throw away nut and seed soak water
  • 8 soaked dates
  • 2 Tablespoons coconut oil (melt if yours is hard). You could use melted cacao butter
  • 2 -3 tablespoons raw cacao powder – or more depending on your taste buds
  • 2 tablespoons coconut blossom nectar - adjust to taste

Method

  1. Drain the nuts and dates
  2. Put everything in a blender or food processor and blend until you have a good consistency. The truffle mix should drop from your spoon so that you can make into balls
  3. Put raw cacao and nibs if you have them on a plate and roll your balls in them (the cacao ones)
  4. Put into shallow containers and freeze for 20 minutes
  5. Eat – not all at once

Options

With this as your base recipe, you can add all kinds of things such pea protein, soaked hemp seeds, fruit, seeds, vanilla and other flavourings, nut butter and you can roll them in coconut or chopped nuts.
