This a great recipe is for something a little different to just raw chocolates and it only takes about 10 minutes to make, so ideal if you're pushed for time; and of course it tastes great!
Ideally you will need a food processor to make it, but if you don't have one then you can also use a blender.
Ingredients
- 3 cups walnuts
- 20 pitted & chopped dates
- 2/3 cup raw cacao powder
- 15g raw cacao butter
- 1 tsp water
- 2 tbsp Sweet Freedom
- 1 tsp vanilla powder or a few drops of vanilla extract
- Pinch of sea salt or Himalayan rock salt
- Desiccated coconut to sprinkle on top
Method
- Slowly melt the cacao butter in a bowl over hot water and place to one side
- Roughly grind the walnuts in a food processor. Don’t over process them or they will go oily
- Add the water, a pinch of salt, the dates, cacao powder, vanilla and Sweet Freedom to the food processor and pulse briefly to start mixing
- Add the melted cacao butter to the other ingredients and process them all together until it lumps up. Careful not to over-process
- Once the mixture starts to look like cake, test it by pressing some between your thumb and finger. When the mixture sticks together easily it is ready
- Turn the mixture out onto a plate and press in to a cake shape
- Dust the top with the desiccated coconut
- Place in the fridge for 30 minutes to help it set, but it tastes great straight away too
