Once you've mastered the beginners raw chocolate recipe that comes in our raw chocolate making kit, then you'll most likely want to start trying something new. Probably the easiest and most obvious thing to try is to start adding some fillings to your raw chocolate creations.

In this recipe, we're going to add some chopped dates and nuts to our raw chocolates. We all know that nuts go well with chocolate, but dates are often over looked. In fact, dates go fabulously well with chocolate, you'll love these. The date adds a chewy gooeyness, while taking away some bitterness and not really tasting of dates.

Method

  1. Roughly chop the dates and nuts so that they are small enough to fit in each mould with plenty of space round them
  2. Follow steps 1 - 6 of our basic raw chocolate recipe
  3. When the mixture suits your taste, pour gently into the mould using a jug or spoon, but only half fill each mould
  4. Drop a piece of date or nut into each mould

  5. Top up each one with the remaining raw chocolate
  6. Place it in the fridge to set for an hour or more (or in the freezer if you can’t wait that long)
  7. Any remaining chocolate is the chocolatier’s treat!

Storage

Your raw chocolates are untempered, which means they need to be kept in the fridge for the best experience. If you don't they will go grainy, so trust us, keep em in an airtight container in the fridge!

When you do, they will keep for up to 4 weeks (even longer in the freezer), though we doubt they will actually last that long as you'll be enjoying them
